Auntie Christine's Banana Bread
Angi makes this cake, so we assume it was her Auntie Christine.
3 large ripe mashed bananas
2 beaten eggs
4 oz caster sugar
4 oz butter
8 oz SR flour
4 oz glace cherries
2 oz walnuts
Sift the flour and then rub in the butter until it's nice and crumbly. Add the sugar, cherries and walnuts and mix together. Beat the eggs, then add the bananas and make it all squishy. Add the squishy mixture to the flour etc and mix together. Pour into a greased loaf tin and bake at Regulo 3 for 1.5 hours. Dunno what that is in Electric - I have a gas oven so I don't care!
The recipe calls for 6oz of sugar but, what with the sweetness of the bananas and cherries, that is a ridiculous amount. And the riper the bananas are the sweeter they will be. You could probably cut the sugar back to 2 oz. I have also tried this recipe with big juicy raisins instead of the walnuts and cherries; next step is to try chunks of chocolate and hazelnuts.
Update The chocolate and hazelnut experiment has been performed, and it was damn fine.
